Snickerdoodles


  • 1 Cp Shortening
  • 1 1/2 Cps Sugar
Cream Together

  • 2 Lrg Eggs (Beaten)
  • ¼ teas. Vanilla
Add to the above and continue mixing until smooth.

In a separate bowl blend together and then add to the above, mixing until smooth.
  • 3 1/8 Cps GF Flour  (See Below)
  • ¼ tsp. Salt
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 2 tsp. Xanthum Gum

When all mixed, roll into walnut sized balls.
In a Large ziploc bag, mix the following:
  • 2 tsp.sugar
  • 2 tsp. cinnamon
  • ½ teas. Ground Cloves
Shake the balls in the cinnamon sugar mixture and place about 2” apart on an ungreased cookie sheet (slightly flatten them). Bake at 400 degrees for about 8 – 10 minutes being very careful not to over bake.

GF Cookie Flour Mix

  • 2 Cps Rice Flour
  • 1 Cp Glutinous Rice Flour
  • 1 Cp Potato Starch
  • ½ Cp Tapioca Starch
(This is slightly more than you will need for this recipe.)
